Hello everyone, I know I've been missing for sometime, buuuuut, nothing, just school and life got in the way. Heheh.
I'm sure you've all noticed that I've deleted most of my posts. Well....it was because of safety and privacy reasons-bit of a safety freak that way.
Anyway, just came to say:

No Bake Nutella Cheese Cake!!
Now, I'm sure that you all can tell I'm a bit of a nutella fanatic....and I so couldn't resist putting this recipe up!
I've made this before, a year ago, to precise. This recipe makes about 4 cups, but today I altered it a bit, it makes enough for one.
Recipe:
For the Crust
12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, melted
For the Filling
1 (8 ounce) package cream cheese, softened
2/3 cup Nutella
1 teaspoon pure vanilla extract
1 (8 ounce) tub frozen whipped topping, thawed
For the Garnish
whipped topping, optional
chocolate shavings, optional
toasted, chopped hazelnuts, optional
Directions:
1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.
Now, as I have mentioned it before, I altered the recipe, making enough for one person.
For the crust I used 3 oreo cookies with about a teaspoon and a half of butter. For the cake/mousse itself, I used 2 ounces of cream cheese and 1/3 cup of nutella, aswell as 2 ounces of (homemade) whipped cream and ofcourse a teaspoon of vanilla.
Yurrrm! Now I'm just waiting for my cake/mousse to set.
*Note: since it isn't baked, the cake will have a mousse like consistency, but it's delicious all the same! :3
